Black Eyed Peas And Sausage Jambalaya

Ingredients

  • 2 lb White onions, minced
  • 2 bn Green onion, minced
  • 1 lrg Green bell pepper, minced
  • 5 x Cloves garlic, minced
  • 1 c. Parsley, minced
  • 3 lb Salt meat*
  • 3 lb Smoked warm sausage
  • 3 lb Uncooked rice
  • 12 c. Water

Directions

  1. Boiled once, cut in small pcs
  2. Fry sausage and cut into bite-size pcs. Saute/fry onion, pepper, garlic and parsley. Cook till limp. Add in salt meat, sausage, blackeyed peas, and rice.
  3. Season to taste. Add in 12 c. water. Bring to a boil; mix well and cover tightly. Cook on lowest heat for 45 min. Don't remove cover during this time. Remove cover for 5 - 10 min before serving .
