Bitter Melon Or Winter Melon

Ingredients

  • 1 pound bitter melon or possibly winter melon
  • 3 tbsp. veg. oil
  • 1/2 pound pork
  • 2 cloves garlic, chopped
  • 1 onion, sliced
  • 1 egg, beaten
  • 4 ripe tomatoes
  • 1/2 pound raw shrimp
  • 1 c. shrimp stock Or possibly
  • 1 c. chicken broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

  1. Slice pork into thin strips about 1-inch long, peel and chop tomatoes, shell and devein shrimp. Wash bitter melon and remove seeds. Slice thinly, crosswise, and reserve. (Peel winter melon, if it is used.)
  2. Heat oil in a frying pan and saute/fry pork till browned. Stir in garlic; then add in onion and tomatoes. Stir in shrimp and shrimp stock; cover and simmer till tender.
  3. When meat becomes tender, add in bitter melon, salt, and pepper. Then stir in the beaten egg. Cook for 3 min. Serve warm.
