%20%20Fortunately,%20our%20vacation%20was%20an%20active%20one%20as%20I%20indulged%20in%20far%20too%20many%20sweet%20temptations,%20including%20this%20berry%20tart%20with%20mascarpone,%20in%20the%20weeks%20leading%20up%20to%20our%20trip.%3C/p%3E%3Cp%3EFinding%20the%20perfect%20pint%20of%20strawberries%20has%20become%20less%20and%20less%20difficult%20recently%20which%20means%20the%20height%20of%20berry%20season%20is%20almost%20upon%20us.%20%20I%20have%20a%20weakness%20for%20fresh%20berries%20and%20when%20I%20decide%20to%20splurge%20on%20them,%20I%20want%20to%20make%20sure%20to%20use%20them%20in%20a%20way%20that%20lets%20them%20reach%20their%20full%20potential.%20%20Fortunately,%20this%20tart%20does%20just%20that.%3C/p%3E%3Cp%3ETarts%20begin%20with%20the%20all-important%20crust.%20%20As%20you%20read%20over%20my%20recipe%20for%20pastry%20dough%20below,%20you%20might%20experience%20d%C3%A9j%C3%A0%20vu.%20%20You%20aren%E2%80%99t%20going%20crazy.%20%20Illustrating%20the%20importance%20of%20pastry%20dough%20to%20any%20good%20cook%E2%80%99s%20repertoire,%20I%20use%20the%20same%20recipe%20for%20sweet%20and%20savory%20dishes.%20%20After%20all,%20flaky,%20buttery%20crusts%20tend%20to%20work%20well%20for%20both%20chicken%20pot%20pies%20and%20apple%20pies,%20not%20to%20mention%20everything%20in%20between.%20%20While%20a%20store-bought%20pie%20dough%20can%20certainly%20be%20substituted,%20please%20keep%20the%20news%20of%20this%20substitution%20to%20yourself.%20%20Requiring%20just%20a%20bit%20more%20time%20to%20make,%20one%20bite%20of%20your%20homemade%20crust%20will%20make%20you%20a%20pie%20snob%20for%20life%20(and%20trust%20me,%20this%20is%20not%20a%20bad%20thing).%3C/p%3E%3Cp%3EBut%20I%E2%80%99m%20getting%20carried%20away.%20%20Back%20to%20the%20tart,%20the%20homemade%20crust%20is%20pre-baked%20and%20then%20spread%20with%20a%20whipped%20filling%20made%20from%20mascarpone%20cheese,%20heavy%20cream,%20and%20sugar.%20%20Not%20too%20sweet,%20this%20filling%20provides%20the%20ideal%20bed%20for%20fresh%20blackberries,%20blueberries,%20raspberries,%20and%20strawberries.%20%20As%20a%20final%20touch,%20I%20brush%20a%20light%20syrup%20made%20from%20equal%20parts%20apricot%20preserve%20and%20water%20over%20the%20berries%20to%20give%20them%20a%20sheen%20that%20makes%20this%20homemade%20tart%20appear%20to%20be%20right%20out%20of%20a%20bakery%20display%20case.%3C/p%3E%3Cp%3ELight%20and%20refreshing%20this%20tart%20is%20the%20perfect%20end%20to%20a%20summer%20meal.%20%20In%20fact%20my%20only%20complaint%20about%20this%20tart%20is%20that%20it%20disappears%20far%20too%20quickly%20from%20the%20fridge.%3C/p%3E%3Cp%3EServes%206-8%3C/p%3E%3Cp%3EMandarin%20orange%20slices,%20sliced%20kiwi%20fruit,%20and/or%20sliced%20bananas%20can%20all%20be%20substituted%20for%20any%20of%20the%20berries%20in%20this%20recipe.%3C/p%3E%3Cp%3E1%20recipe%20pastry%20dough%20(recipe%20follows)%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees.%3C/p%3E%3Cp%3EOn%20a%20well-floured%20surface,%20roll%20out%20the%20pastry%20dough%20to%201/4-inch%20thickness%20in%20the%20shape%20of%20a%20large%20circle%20(about%2014-inches%20in%20diameter).%20%20Place%20the%20rolling%20pin%20in%20the%20center%20of%20the%20circle%20and%20fold%20one%20half%20of%20the%20pastry%20dough%20over%20the%20rolling%20pin.%20%20Pick%20up%20the%20rolling%20pin%20and%20transport%20the%20pastry%20dough%20to%20a%2010-inch%20tart%20pan.%20%20Trim%20and%20adjust%20the%20pastry%20dough%20as%20needed%20so%20that%20it%20fits%20in%20the%20tart%20pan.%3C/p%3E%3Cp%3EPrick%20the%20dough%20with%20the%20tines%20of%20a%20fork%20and%20then%20lay%20a%20sheet%20of%20parchment%20paper%20over%20it.%20%20Place%20pie%20weights%20or%20a%20mixture%20of%20dried%20beans%20and%20rice%20on%20top%20of%20the%20parchment%20paper.%20Bake%20for%2020%20minutes%20then%20remove%20the%20tart%20shell%20from%20the%20oven%20and%20carefully%20remove%20the%20parchment%20paper%20and%20pie%20weights.%20%20Return%20the%20tart%20shell%20to%20the%20oven%20for%20another%205%20to%2010%20minutes%20until%20it%20is%20golden%20brown.%20%20Remove%20the%20shell%20from%20the%20oven%20and%20cool.%3C/p%3E%3Cp%3EMeanwhile,%20in%20a%20saucepan,%20bring%20the%20apricot%20jelly%20and%20the%20water%20to%20a%20boil.%20%20Reduce%20the%20heat%20so%20that%20you%20have%20a%20strong%20simmer%20and%20allow%20the%20jelly%20mixture%20to%20reduce%20by%20about%20half.%20%20Strain%20the%20jelly%20mixture%20into%20a%20small%20bowl%20(discard%20any%20fruit%20bits%20that%20are%20caught%20in%20the%20strainer)%20and%20let%20cool.%3C/p%3E%3Cp%3EIn%20an%20electric%20mixer%20with%20a%20whisk%20attachment,%20beat%20the%20mascarpone,%20heavy%20cream,%20and%20sugar%20until%20stiff%20peaks%20form.%3C/p%3E%3Cp%3ETo%20assemble%20the%20tart,%20spread%20the%20mascarpone%20filling%20over%20the%20bottom%20of%20the%20cooled%20tart%20shell.%20%20Place%20the%20fruit%20on%20top%20of%20the%20mascarpone%20filling%20as%20desired.%20Brush%20the%20fruit%20with%20the%20jelly%20mixture%20and%20serve.%3C/p%3E%3Cp%3EPastry%20Dough%3C/p%3E%3Cp%3E1%201/4%20cups%20all-purpose%20flour%3C/p%3E%3Cp%3E1/4%20teaspoon%20salt%3C/p%3E%3Cp%3E8%20tablespoons%20cold%20unsalted%20butter,%20cut%20into%20small%20cubes%3C/p%3E%3Cp%3E5%20tablespoons%20ice%20water%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20whisk%20together%20the%20flour%20and%20salt.%20%20Using%20a%20fork%20or%20pastry%20blender%20cut%20the%20butter%20into%20the%20flour%20mixture%20until%20the%20fat%20is%20in%20small%20lumps.%20%20%20Sprinkle%20with%20ice%20water%20and%20use%20a%20fork%20to%20pull%20the%20mixture%20together.%20%20If%20the%20mixture%20is%20not%20holding%20together,%20add%20up%20to%201%20more%20tablespoon%20of%20water.%3C/p%3E%3Cp%3ETurn%20dough%20on%20the%20counter%20and,%20working%20quickly,%20mold%20into%20a%20large%20ball.%20%20Press%20into%20a%205%E2%80%9D%20disc%20then%20wrap%20with%20plastic%20wrap%20and%20refrigerate%20for%20at%20least%20thirty%20minutes%20and%20up%20to%20one%20day.%3C/p%3E%3Cp%3EUse%20as%20directed%20in%20the%20recipe.%3C/p%3E){kind=link}
