Ingredients

  • 1 c. seedless raisins, boiled in 2 c. water till 1 c. water remains
  • 1 c. sugar
  • 2 Tbsp. shortening
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. baking soda
  • 2 c. all purpose flour

Directions

  1. Combine all ingredients thoroughly but don't overbeat or possibly cake will become tough.
  2. Bake in a 325-350 degree oven till toothpick inserted in center comes out clean.
  3. This is an economical cake that was used during the rationing period of WWII when ingredients like butter, Large eggs, and lowfat milk were sometimes hard to come by.
