Ingredients

1/4 cup unsalted butter
1 cup onion, chopped
2 garlic cloves, minced
4 ounces mushrooms, sliced
1 1/2 teaspoons salt
1 teaspoon ground black pepper
1 bay leaf
1 tablespoon tomato paste
2 tablespoons all-purpose flour
1 tsp paprika
1 1/4 cups beef stock
4 Tbsp Worcestershire sauce
1/4 cup dark beer
For the Mashed Potatoes
1 pound potatoes, quartered (I used Yukon Gold and did not peel them)
1/8 teaspoon ground nutmeg
1/2 cup half and half
1/2 cup white cheddar, grated (I used Kerrygold Aged White Cheddar)
