Ingredients

  • 2 3/4 pound round steaks
  • 2 Large eggs
  • 2 tbsp. lowfat milk
  • 1 1/4 c. bread crumbs
  • 1/3 c. Parmesan cheese
  • Salt and pepper
  • 4 c. cooked rice
  • 3/4 c. butter
  • 2 garlic cloves, slivered
  • 2 teaspoon flour
  • 1/2 c. Marsala wine
  • 1 beef bouillon cube
  • 1/3 c. minced parsley
  • 2 tbsp. minced pimiento

Directions

  1. Lb. steak. Cut in 3x2 inch pcs. Sprinkle with salt and pepper. Beat Large eggs and lowfat milk in bowl. In other bowl combine bread crumbs and Parmesan cheese. Dip meat in egg mix, then crumbs. In 12 inch skillet (medium heat) heat 1/4 c. butter; cook garlic. Add in 1/2 of meat. Cook till lightly browned on both sides. Remove meat to platter; keep hot. Repeat using 1/4 c. butter. Meanwhile in 1 c. measuring c. mix flour with 3/4 c. water. Throw away garlic. Heat remaining 1/4 c. butter in skillet. Stir in flour mix, wine, bouillon and 1/4 c. parsley. Cook, stirring till sauce is thickened. Pour sauce over cooked meat.
  2. Combine rice with pimientos and spoon around meat. Garnish with remaining parsley.
