Ingredients

  • 1 pound grnd beef
  • 1 sm. onion, minced
  • 1/4 c. green pepper, minced
  • 2 cloves garlic, chopped
  • 1 (10 ounce.) can enchilada sauce
  • 1 (2 1/4 ounce.) can sliced olives
  • Salt & pepper
  • 12 corn tortillas
  • 1 pound Jack or possibly cheddar cheese
  • Lowfat sour cream
  • Minced green onion
  • Ripe black olives

Directions

  1. Brown beef in large skillet over medium high heat. Add in onion, pepper and garlic; continue to cook till vegetables are tender. Stir in enchilada sauce, sliced olives and salt and pepper to taste. Lower heat and simmer, uncovered about 20 min.
