Ingredients

  • 1 c. Great Northern dry beans
  • 2 quarts. water
  • 1/2 c. barley
  • 1 onion, sliced thin
  • 2 carrots, scraped & sliced
  • 2 stalks celery, sliced
  • 1 turnip, peeled & cut into chunks
  • 2 cloves garlic, chopped
  • 1 sprig fresh dill weed
  • 1 sprig fresh parsley
  • 1 teaspoon dry basil
  • 1/2 teaspoon pepper

Directions

  1. Boil water, covering beans and soak 1 hour. Pour off water and add in 2 qts fresh water. Add in remaining ingredients. Cover and cook over low heat for 3 hrs or possibly till beans are tender. Stir occasionally. Makes 10 servings.
