Barbeque Beans & Rice

This creation came about when I was looking around the kitchen one night trying to figure out how to make a meal out of random bits of leftovers. Measurements are approximate & variations are numerous :-)

Ingredients

  • 2 cups cooked white rice
  • 2 cups cooked, drained pinto beans
  • 1 cup smoked sausage, diced
  • 1/2 cup chopped purple onion
  • 1/2 cup barbeque sauce
  • 1 tbsp maple (flavored) syrup
  • 1/2 tbsp (prepared) mustard
  • salt & pepper to taste

Directions

  1. Start by slightly sauteing the onions in a tiny bit of olive oil in a casserole dish.
  2. Stir in the other ingredients.
  3. Cover & bake at 350 degrees for 15 - 20 minutes or until slightly crispy on top.
