Barbecued Ribs, Peanut Chipotle Sauce, Tomatillo Corn Salsa Recipe

Ingredients

  • 2 c. soy sauce
  • 1 c. water
  • 4 Tbsp. minced ginger
  • 3 x garlic cloves coarsely minced
  • 2 x pork rib racks Peanut-Chipotle Sauce (see recipe) Tomatillo-Corn Salsa (see recipe)

Directions

  1. Combine the soy sauce, water, ginger and garlic in a medium saucepan and bring to a boil. Turn off heat and let cold. Place ribs in a large roasting dish. Cover with the marinade and let marinate in refrigerator for 24 hrs.
  2. Preheat grill.
  3. Remove ribs from marinade. Grill the ribs turning and brushing with the Peanut-Chipotle Sauce till cooked through. Serve with the Tomatillo-Corn Salsa.
  4. This recipe yields 4 servings.
