Ingredients

  • 1 x (8 ounce) can tomato paste
  • 1/2 c. Extra virgin olive oil
  • 1/2 c. Orange juice
  • 1/4 c. Vinegar
  • 1 1/2 tsp Crushed dry oregano
  • 1 tsp Salt
  • 6 x Peppercorns
  • 1 x Chopped garlic clove Chicken
  • 1/4 c. Honey
  • 1/2 tsp Dry mustard

Directions

  1. In large screw top jar combine paste, oil, orange juice, vinegar, salt, peppercorns & garlic. Cover & shake vigorously to blend. In a shallow dish pour sauce over chicken. Cover & marinate 2 hrs at room temperature or possibly overnight in refrigerator, turning occasionally.
  2. Drain, reserving marinade. Grill chicken over med coals for 45-50 min, brushing with marinade & turning frequently. Just before serving, brush with a mix of honey & mustard to glaze.
