.%20They%20both%20asked%20for%20seconds!%3C/p%3E%3Cp%3ESo%20succulent%20and%20flavorful,%20and%20the%20balsamic-onion%20sauce%20to%20finish%20was%20amazing!%3C/p%3E%3Cp%3EI%20decided%20to%20begin%20by%20brining%20my%20chicken.%20I%20highly%20recommend%20brining!%20Including%20this%20step%20will%20lend%20itself%20to%20a%20more%20juicy,%20tasty,%20roast%20chicken.%20My%20brine%20recipe%20is%20included%20below,%20but%20basically%20I%20just%20boiled%20water%20with%20salt%20and%20a%20little%20sugar%20to%20dissolve%20the%20crystals.%20Then%20I%20cooled%20the%20brine%20to%20around%2040%20degrees%20and%20dropped%20my%20chicken%20in%20for%20the%20day.%20You%20could%20make%20the%20brine%20the%20night%20before%20and%20drop%20the%20chicken%20in%20the%20next%20morning%20before%20leaving%20for%20work,%20or%20you%20could%20just%20brine%20the%20chicken%20overnight.%20I%20think%20mine%20soaked%20for%20about%206%20hours%20today.%3C/p%3E%3Cp%3EA%20little%20over%202%20hours%20before%20dinner%20time,%20I%20prepared%20a%20nice%20little%20bed%20of%20chopped%20red%20onion%20for%20my%20chicken.%20Just%20chop%20an%20onion%20and%20spread%20it%20around%20the%20bottom%20of%20a%20roasting%20dish.%20(I%20just%20used%20my%20Pyrex%20casserole%20dish).%3C/p%3E%3Cp%3EThen%20I%20combined%20a%20little%20dry%20red%20wine,%20a%20little%20broth,%20and%20some%20balsamic%20vinegar.%3C/p%3E%3Cp%3EReally,%20I%20meant%20to%20season%20the%20bird,%20place%20it%20on%20the%20onions%20and%20then%20pour%20the%20balsamic%20vinegar%20mix%20over%20the%20top.%20But%20I%20was%20distracted%20(by%20certain%20little%20people%20begging%20and%20pleading%20their%20case%20to%20spoil%20dinner%20with%20animal%20crackers%20and%20chocolate%20covered%20pretzels%20)%20and%20so%20I%20ended%20up%20pouring%20the%20red%20wine/vinegar%20mixture%20right%20onto%20the%20onions.%20No%20problem%20though,%20when%20the%20time%20came,%20I%20just%20rolled%20the%20chicken%20around%20in%20the%20onion%20and%20vinegar-wine%20mixture%20so%20that%20it%20got%20a%20nice%20little%20coat.%3C/p%3E%3Cp%3ETo%20season%20the%20chicken,%20just%20mix%20together%20some%20minced%20garlic,%20rosemary,%20salt,%20pepper,%20and%20olive%20oil%20(the%20oil%20allows%20for%20easier%20spreading).%3C/p%3E%3Cp%3ERemove%20the%20chicken%20from%20the%20brine%20and%20pat%20dry.%20Then,%20rub%20the%20garlic-rosemary%20mixture%20under%20the%20skin%20before%20placing%20the%20chicken%20onto%20the%20prepared%20bed%20of%20onions.%3C/p%3E%3Cp%3EPop%20that%20bird%20into%20the%20oven%20and%20bake%20for%202%20hours%20(or%20until%20a%20meat%20thermometer%20reads%20180%20degrees),%20basting%20with%20the%20pan%20juices%20a%20couple%20of%20times.%20This%20chicken%20emerged%20from%20the%20oven%20with%20a%20gorgeous%20brown%20skin,%20and%20the%20whole%20house%20smelled%20SO%20good!%20I%20couldn't%20wait%20to%20carve%20it!%3C/p%3E%3Cp%3EWhile%20the%20chicken%20rests%20for%20about%2015%20minutes,%20transfer%20the%20pan%20juices%20into%20a%20bowl.%20As%20you%20can%20see%20from%20the%20picture,%20you'll%20want%20to%20skim%20off%20some%20of%20the%20fat...%3C/p%3E%3Cp%3Eleaving%20you%20with%20a%20rich,%20mouth-watering%20sauce%20to%20serve%20over%20the%20chicken.%3C/p%3E%3Cp%3EThe%20chicken%20was%20wonderful%20all%20on%20it's%20own%20with%20the%20flavors%20of%20the%20garlic%20and%20rosemary%20and%20all%20juicy%20from%20the%20brine,%20but%20that%20sauce%20just%20put%20it%20over%20the%20top!%20I%20mean%20it...this%20is%20the%20best%20roast%20chicken%20I%20have%20ever%20made!%20Loved%20it!%3C/p%3E%3Cp%3EBalsamic%20Roast%20Chicken%20with%20Red%20Onion%20Sauce%3C/p%3E%3Cp%3Einspired%20by%20this%20recipe%20from%20Healthy%20Cooking%20magazine,%20featured%20in%20the%20Aug/Sept%202010%20issue%3C/p%3E%3Cp%3EFor%20Brine:%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EBoil%20salt%20and%20sugar%20in%20water%20until%20dissolved%20for%20brine.%20Cool%20to%2040%20degrees.%20Cover%20chicken%20with%20brine%20and%20refrigerate%20for%20at%20least%206%20hours.%3C/p%3E%3Cp%3ERemove%20chicken%20from%20brine.%20Pat%20dry.%20In%20a%20small%20bowl,%20combine%20the%20rosemary,%20garlic,%20salt,%20pepper%20and%20olive%20oil;%20rub%20under%20skin%20of%20chicken.%20Place%20onion%20in%20a%20shallow%20roasting%20pan;%20top%20with%20chicken.%20Combine%20wine%20and%20balsamic%20vinegar;%20pour%20over%20chicken.%3C/p%3E%3Cp%3EBake,%20uncovered,%20at%20350%C2%B0%20for%202%20to%202-3/4%20hours%20or%20until%20a%20meat%20thermometer%20reads%20180%C2%B0,%20basting%20occasionally%20with%20pan%20juices.%20(Cover%20loosely%20with%20foil%20if%20chicken%20browns%20too%20quickly.)%3C/p%3E%3Cp%3ELet%20stand%20for%2015%20minutes%20before%20carving.%20Remove%20and%20discard%20skin%20before%20serving.%20Pour%20onion%20sauce%20into%20a%20small%20bowl;%20skim%20fat.%20Serve%20with%20chicken.%20Yield:%2012%20servings%20(1-1/2%20cups%20onion%20sauce).%3C/p%3E%3Cp%3ENutrition%20Facts:%203%20ounces%20cooked%20chicken%20with%202%20tablespoons%20onion%20sauce%20equals%20182%20calories,%207%20g%20fat%20(2%20g
