Baked tortellini

Baked tortellini is the ultimate comfort food any time of the year!

Ingredients

  • 1 tbs olive oil
  • 1 small onion, finely chopped
  • 1 large clove garlic, finely minced
  • 1 tsp dried oregano, crumbled
  • 400 g chopped tomatoes
  • 1 tsp sugar
  • 250 g fresh tortellini (with cheese or spinach)
  • ½ cup coarsely grated mozzarella
  • ½ cup grated Parmesan or Grana Padano cheese
  • Salt and pepper

Directions

1. Sauté onion and garlic in olive oil for 5 minutes. Season with salt, pepper and oregano. Add chopped tomatoes and their juice. Mix and bring to a boil. Sprinkle with sugar and reduce heat. Cook for 20 minutes.
2. Meanwhile, cook the pasta according to manufacturer's directions. Drain and return to the pot. Toss with tomato sauce.
3. Transfer pasta and sauce to the lightly oiled baking dish and sprinkle with grated cheese.
4. Bake at 240ºC for 20-25 minutes, until the surface of the dish is well baked. Remove pan from oven and let stand 5 minutes before serving.
