Ingredients

  • 2 lrg Baking potatoes
  • 1 Tbsp. Extra virgin olive oil
  • 1/2 tsp Paprika
  • 1/4 tsp Salt

Directions

  1. Scrub 2 large (8-10 ounce) baking potatoes. Cut each in half lengthwise. Cut each half into 4 spears. Place potatoes in large pot of lightly salted boiling water, bring water back to boil and boil 3 min. Drain in colander.
  2. Spray cooking sheet with cooking spray.
  3. Mix 1 Tbsp. extra virgin olive oil and potatoes in bowl.
  4. Mix 1/2 tsp. paprika and 1/4 tsp. salt together, toss over potatoes. Mix well.
  5. Bake in preheated 400 oven for 15 min or possibly till tender.
  6. Place in paper towel lined basket or possibly bowl. Toss gently with 1 Tbsp. graded Parmesan Cheese. Serve warm.
  7. Makes 2 servings Can add in other spices to salt mix for different flavors.
