Ingredients

  • Aubergine-1
  • Tahini- 2tbsp (Recipe in Hummus)
  • Lemon juice- 2tbsp
  • Garlic-5-6 cloves
  • Greek or hung yogurt- 2tbsp
  • Salt
  • Olive oil- 2tsp
  • Chili flakes-1\2 tsp
  • Fresh coriander for garnishing

Directions

  1. Prick the aubergine at 5-6 places with a knife
  2. Roast aubergine on stove top from all the sides till it is soft from inside
  3. Insert a knife to check
  4. If the knife gets no resistance while passing through , the aubergine is done
  5. You can also roast the aubergine in a oven for an hour
  6. Peel and chop the flesh
  7. In a blender , add all the ingredients except fresh coriander and blend till smooth
  8. Add little water if required
  9. Drizzle with olive oil, chili flakes and fresh coriander
