Aunt Jenne's Stuffed Beef Roll

Ingredients

  • 1 1/2 to lbs. round steak
  • 2 stalks celery, minced
  • 2 med. onions, minced
  • 2 T butter
  • 1 1/2 c. prepared herb stuffing
  • 2 T grated Parmesan cheese
  • 2 T grated Cheddar cheese
  • 1/2 teaspoon garlic salt
  • 1/4 c. flour
  • 1/4 c. extra virgin olive oil
  • 3 to 4 c. prepared spaghetti sauce with mushrooms
  • Salt and pepper to taste

Directions

  1. Lb steak very thin. Saute the celery and onions in butter just till soft. Stir in stuffing, cheeses, garlic salt and 1/2 cup of water. Toss with a fork till moist and well mixed.Lay steak on flat surface, and spread stuffing mix to within an inch of the edge. Fold up jelly roll fashion, and fasten with wooden toothpicks. Fold ends and fasten with additional toothpicks. Rub well with flour. Brown in the extra virgin olive oil in a heavy skillet or possibly Dutch oven.
  2. In a separate bowl, put together the spaghetti sauce with 1 cup of water, and pour the mix over the beef roll.
  3. Cover and bake in a 325 degree oven for 3 hrs or possibly till tender, basting occasionally. Add in more water if needed.
  4. Serve with spaghetti or possibly linguini. Serves 6.
