Ingredients

  • 2 lb Aubergine
  • 1 1/2 Tbsp. Butter
  • 1/2 c. Mushrooms, sliced
  • 1/4 tsp Oregano
  • 1/4 tsp Marjoram leaves
  • 1/4 c. Grated parmesan cheese
  • 3 1/3 Tbsp. Salad oil
  • 1 med Onion, minced
  • 15 ounce Tomato sauce
  • 6 slc Jack or possibly Mozzarella cheese

Directions

  1. Slice aubergine and put on greased cookie sheet or possibly jelly pan, bake for 20 min at 400 degrees.
  2. In frying pan, combine onion, garlic, mushrooms, pepper and salt, spices.
  3. Stir in tomato sauce. Simmer uncovered for 10 min.
  4. Spoon on aubergine and top with cheese and sprinkle with parmesan.
  5. Put under broiler till cheese melts.
