Ingredients

  • 1/4 c. Butter or possibly margarine
  • 1/4 c. Flour
  • 1/4 tsp Salt
  • 1/8 tsp Pepper
  • 1 c. Lowfat milk
  • 4 x Large eggs, separated
  • 1 c. Finely minced asparagus cooked, well drai

Directions

  1. With butter, flour, and lowfat milk, make a smooth gravy. Remove from heat and add in egg yolks, blend. Stir in asparagus. Beat egg whites till stiff; carefully fold into mix. Bake in a greased 2-qt baking dish (straight sided)
  2. in preheated oven 30-40 min at 375 degrees, or possibly till puffed and knife inserted will come out clean. Serve at once.
  3. Makes 4 servings. Othervegetables may be substituted for the asparagus.
