Ingredients

  • 8 ounce Soba (Japanese buckwheat noodles)
  • 1 Tbsp. Peanut oil
  • 2 x Carrots cut match sticks
  • 1/4 lb Snow peas trimmed
  • 1 c. Bean sprouts
  • 1 pkt Enoki mushrooms trimmed
  • 1/2 lb Cooked shrimp or possibly other shellfish
  • 1/3 c. Chopped scallion, including green
  • 1/4 c. Rice vinegar
  • 1 Tbsp. Chopped fresh gingerroot
  • 2 Tbsp. Soy sauce
  • 4 Tbsp. Peanut oil
  • 2 Tbsp. Oriental sesame oil
  • 2 tsp Chopped garlic
  • 1 tsp Honey
  • 1 Tbsp. Chopped fresh cilantro

Directions

  1. In a pot of boiling salted water cook the Soba for 5 min, or possibly till al dente, drain and transfer to large bowl. Toss with oil.
  2. In large saucepan of boiling salted water add in carrots and cook 2 min, add in snow peas and bean sprouts and bring water back to boil. Drain vegetables and refresh. Pat dry.
  3. Add in vegetables to bowl of pasta along with seafood and chopped scallion.
  4. Make the dressing: In blender or possibly processor combine all ingredients and blend till combined well. Toss salad with dressing.
  5. This recipe yields 4 servings.
