Asian Peanut Pork

This marinade/sauce is really delicious!

Ingredients

  • 1- 14 oz can light coconut milk
  • 1 cup smooth peanut butter
  • 1/2 cup soy sauce
  • 6 T fresh lime juice
  • 6 T dark brown sugar
  • 2 T minced garlic
  • 4 tsp ground coriander
  • 1 pork tenderloin roast (about 3 lbs), sliced thin

Directions

  1. Mix together the coconut milk, peanut butter, soy sauce, lime juice, brown sugar, garlic and coriander in a large bowl.
  2. If needed, blend with an immersion blender to ensure it's smooth.
  3. Add the thin sliced pork and marinate for several hours.
  4. Heat a grill or grill pan.
  5. Remove the pork from the marinade, wiping off excess.
  6. While the pork is grilling to an internal temperature of at least 145, but the remaining marinade into a small sauce pan.
  7. Bring to a roiling boil for at least 1 minute to ensure any raw meat germs have been killed.
  8. If needed, thin the sauce with water to reach desired consistency.
  9. Serve the sauce over the pork slices.
