Arugula Salad With Orange Zest Vinaigrette

Ingredients

  • 2 1/2 Tbsp. extra virgin olive oil
  • 2 tsp grated orange zest
  • 1 tsp red wine vinegar
  • 1 tsp balsamic vinegar
  • 1 tsp orange juice Coarse salt to taste Freshly-grnd black pepper to taste
  • 8 c. stemmed arugula leaves rinsed, crisped

Directions

  1. Mix oil, zest, red wine vinegar, balsamic vinegar, orange juice and salt and pepper to taste in small bowl. (Can be made a day ahead and refrigerated. Let vinaigrette come to room temperature before using.)
  2. To serve, pour vinaigrette over arugula. Toss. Taste and adjust seasonings.
  3. This recipe yields 4 servings.
