Ingredients

  • 8 x Prepared crepes
  • 1 pkt (8-ounce) cream cheese, softened
  • 1/4 c. Butter, softened
  • 1/4 c. Sugar
  • 1 1/2 tsp Vanilla
  • 1 tsp Grated lemon rind
  • 2/3 c. Apricot jam
  • 1/3 c. Orange juice
  • 2 Tbsp. Butter
  • 1 Tbsp. Lemon juice
  • 1 1/2 tsp Grated lemon peel

Directions

  1. Combine cheese, butter, sugar, vanilla and 1 tsp. lemon rind with an electric mixer. Spread 3 tsp. in each crepe. Fold envelope style.
  2. Arrange in buttered dish. Bake 10 min at 350 degrees. Heat all ingredients for sauce together till smooth. Serve over crepes.
  3. Serves 4.
