Ingredients

  • 1/2 c. Margarine
  • 1 x Egg
  • 8 pkt Sweet and Low
  • 1 3/4 c. Cake flour
  • 1 tsp Baking soda
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Cloves, allspice, ginger
  • 1 c. Unsweetened applesauce
  • 2 tsp Vanilla
  • 1/3 c. Raisins
  • 1/3 c. Minced walnuts

Directions

  2. Cream shortening till fluffy. Beat egg and Sweet and Low until lemon colored, add in to shortening alternately with applesauce, blending well after each addition. Add in vanilla, add in dry ingredients slowly. Stir in raisins and nuts. Heat oven to 375 . Line cupcake pans with paper liners, fill 2/3 full, bake for 15-20 min.
  3. Makes about 30 according to size of pan.
