Apple Chicken With Curry Sauce

Ingredients

  • 2 Tbsp. Butter
  • 2 x Tablesoons flour
  • 2 c. Heavy cream
  • 2 x Chicken bouillion cubes
  • 1/2 c. Cream of coconut or possibly 1/2 c. coconut lowfat milk Curry pwdr to taste, (approximately 1 tsp.)
  • 1 whl chicken breast
  • 1/4 c. Apple slices
  • 1/4 c. Onions, minced
  • 1/4 c. Mushrooms, minced
  • 4 x Broccoli florets, (4 to 5)

Directions

  1. Prepare a roux by melting the butter and blending with the flour over medium heat.
  2. Stir constantly and add in cream, bouillion cubes, and coconut lowfat milk.
  3. Add in curry pwdr and continue stirring till mix boils and thickens.
  4. Set aside.
  5. Place chicken breast in a small casserole dish, skin side down.
  6. Fill breast with the apples, onions, mushrooms, and broccoli.
  7. Fold two halves of chicken breast together.
  8. Cover with curry sauce and garnish.
  9. Bake for 15 to 20 min at 375 degrees.
