Ingredients

  • 1/2 lrg White cabbage, shredded
  • 3 med Onion
  • 1 clv garlic, crushed
  • 4 lrg Green apples
  • 1/4 c. Butter
  • 3 pt Chicken stock or possibly vegetable stock
  • 1 x salt & freshly grnd black pepper
  • 1 tsp Sugar
  • 1 Tbsp. Fresh ginger, grated

Directions

  1. Finely shred the cabbage and slice the onions. Peel and core the apples and cut into even-sized pcs.
  2. Heat the butter in a heavy-buttomed pan, taking care not to let it brown. Add in the cabbage, onions and apples, and sweat over low heat, tossing the pan frequently. Add in the garlic and cover with the cool stock.
  3. Simmer till the cabbage is just tender. Blend in a blender till smooth. Season with salt, pepper and sugar.
  4. Reheat the soup and serve with a little minced green ginger in each bowl.
  5. Makes 4 to 5 servings.
