Ingredients

  • 2 c. Diced cooked turkey
  • 1 c. Pineapple chunks -- well
  • Liquid removed
  • 1 c. Diced celery
  • 1/2 c. Sliced greed onions
  • 1/4 c. Dry roasted peanuts
  • 1 c. Seedless green peppers
  • 2/3 c. Mayonnaise
  • 2 Tbsp. Minced chutney
  • 1 Tbsp. Lime juice
  • 1/2 tsp Curry pwdr
  • 1/4 tsp Salt
  • Lettuce leaves -- optional

Directions

  1. In a mixing bowl, toss first six ingredients. In a small bowl, combine all other ingredients except lettuce. Pour over turkey and mix gently.
  2. Chill. Serve on a bed of lettuce, if you like.
  3. Yields: 4 servings.
  4. The fruit, nuts and seasonings give the salad a unique flavor.
