Ingredients

  • 1 Duncan Hines yellow or possibly white cake mix
  • 3 large eggs
  • 1/3 c. oil
  • 2/3 c. water
  • 8 ounce cream cheese
  • 6 ounce instant vanilla pudding mix
  • 2 c.lowfat milk
  • 15 ounce can crushed pineapple
  • Cold whip (lg. size)
  • 1 c. coconut
  • 1/2 c. minced pecans
  • Maraschino cherry halves

Directions

  1. Beat well and pour into greased 13 x 26 inch shallow pan. Bake 15 min at 350 degrees, let cool.
  2. Beat cream cheese, pudding and lowfat milk well and spread over cooled cake. Drain crushed pineapple, spread over pudding mix. Spread Cool Whip topping over pineapple. Sprinkle coconut over Cool Whip topping. Top with Cool Whip with minced pecans. Dot top with cherry halves.Winter Park F.O.P.A. Lodge 64A
