20 minute Skillet Baked Eggplant Parmesan

Ingredients

  • One eggplant (sliced)
  • 20 ounces homemade chunky Tomato Sauce (or any of your choice)
  • 1 cup Grated Parmesan Cheese
  • 1/2 Cup Grated Mozzarella
  • Garnish Fresh Basil Leaves

Directions

  1. Pre Heat Oven 400 F
  2. Slice Eggplant (in 1/4" slices) add to a skillet, it is ok if they overlap
  3. Add mozzarella cheese, add tomato sauce, add parmesan and place into the hot oven for 20 minutes
  4. Garnish with fresh Basil
