Hey again Val! I was fortunate enough to visit the UK when I was in high school!! Absolutely Fantastic!! We were all over the place, and I even went to Windsor Castle!! We had an amazing dinner night on the Thames at the Beefeater!! I'd love to return one day. Oh, I was thinking about your meatloaves again and if you were able to freeze them, I have an even better idea on how to make up for the extra sauce. Go ahead and cook your loaf, if uncooked, and bake as usual. Meanwhile, whip up a batch of mashed potatoes and distribute atop the cooked loaf pressed to the shape of your cooking vessel. Place back in oven, and bake for about 15 more minutes. Turn on broiler and lightly brown top. You would then have a slightly unconventional yet equally delicious one dish meal!! Plus your own unique spin of Shepard's pie, which I tried for the first time while visiting the UK!!
