Ingredients

  • 4 lg. veal cutlets, 1/2 inch thick
  • 2 Large eggs
  • 1/4 teaspoon salt
  • 1 teaspoon pepper
  • 1 c. bread crumbs
  • 4 tbsp. grated cheese
  • 1/4 c. oil
  • 1 teaspoon oregano
  • 1 teaspoon parsley
  • 2 c. tomato sauce
  • 5-6 slices Mozzarella cheese, thin sliced

Directions

  1. Beat Large eggs well, add in salt and pepper; set aside.
  2. Mix bread crumbs with grated cheese, oregano, parsley.
  3. Dip veal cutlets into the beaten Large eggs, then roll in bread crumbs. Fry on both sides till golden brown. Place cutlets in a baking dish. Pour tomato sauce over them. Place Mozzarella cheese slice on each cutlet. Bake at 350 degrees for 30 min.
