Ingredients

  • 2/3 c. shortening
  • 1 c. sugar
  • 2 large eggs
  • 2 1/4 c. self rising flour
  • 1 sm. can sliced pineapple
  • 1 teaspoon soda
  • 1 c. buttermilk
  • 1 teaspoon vanilla
  • 1 stick butter
  • 1/2 c. brown sugar

Directions

  1. Cream shortening, sugar, large eggs and vanilla till light and fluffy. Dissolve soda in buttermilk. Add in this and flour to creamed mix and mix well. Add in juice from can of pineapple; mix well. In pan cake is to be cooked in, heat butter and brown sugar, when melted place pineapple slices evenly over it. Pour cake over pineapple. Bake at 350 degrees for 25 to 30 min.
