Ingredients

  • 2 c. cooked tri-colored rotini pasta
  • 1/2 c. halved cherry tomatoes
  • 1/4 c. diced red pepper
  • 1 Tbsp. sliced black olives
  • 1 can artichoke hearts - (15 ounce) liquid removed, halved
  • 1/4 c. balsamic vinegar
  • 2 tsp extra virgin olive oil
  • 1 Tbsp. Dijon mustard
  • 2 tsp chopped fresh basil
  •     Freshly-grnd black pepper to taste

Directions

  1. Combine all salad ingredients in a large bowl. Whisk together the dressing ingredients. Pour the dressing over the salad and toss to coat well. Serve at room temperature.
