Ingredients
- 2 c. cooked tri-colored rotini pasta
- 1/2 c. halved cherry tomatoes
- 1/4 c. diced red pepper
- 1 Tbsp. sliced black olives
- 1 can artichoke hearts - (15 ounce) liquid removed, halved
- 1/4 c. balsamic vinegar
- 2 tsp extra virgin olive oil
- 1 Tbsp. Dijon mustard
- 2 tsp chopped fresh basil
- Â Â Freshly-grnd black pepper to taste
Directions
- Combine all salad ingredients in a large bowl. Whisk together the dressing ingredients. Pour the dressing over the salad and toss to coat well. Serve at room temperature.
