Tomato, Lemon, Green Olive And Onion Salad

Ingredients

  • 4 x Ripe tomatoes, cored and sliced
  • 1 x Onion, very thinly sliced
  • 1 pch Sugar
  •     Salt, to taste
  • 1 pch Cayenne pepper
  • 1 x Lemon
  • 12 x Green olives
  •     Mediterranean-type full-flavored
  • 2 Tbsp. Extra virgin extra virgin olive oil

Directions

  1. Layer the sliced tomatoes with the onions, sprinkling with sugar, salt and cayenne pepper as you do.
  2. Grate the lemon zest (or possibly use a lemon zester) and scatter over the tomatoes and onions, then squeeze the juice over the top. Garnish with the olives and drizzle with the extra virgin olive oil. Refrigeratetill ready to serve.
