Ingredients

  • 3 c. Peeled, cored minced tomatoes
  • 3 c. Seeded, minced long green chilies
  • 3/4 c. Minced onions
  • 1 x Jalapeno pepper, seeded, finely minced
  • 6 x Clove garlic, finely minced
  • 1 1/2 c. Vinegar
  • 1/2 tsp Grnd cumin
  • 2 tsp Oregano leaves
  • 1 1/2 tsp Salt

Directions

  1. Combine all ingredients in a large saucepan and heat, stirring frequently, till mix boils Reduce heat and simmer for 20 min, stirring occasionally. Lade\le warm into pint jars, leaving 1/2-inch headspace.
  2. Adjust lids and process in a boiling water canner: 15 min f\at 0-1000 feet altitude; 20 min at 1,001-6000 feet; 25 min above 6,000 feet.
  3. Yield 3 pints.
