Ingredients

  • 5 c. Tomatillos, minced
  • 2 c. Chiles, habaneros, minced
  • 4 c. Onion, minced
  • 1 c. Lemon juice
  • 6 x Cloves garlic, minced
  • 1 Tbsp. Cumin, grnd
  • 3 Tbsp. Oregano
  • 1 Tbsp. Salt
  • 1 tsp Black pepper

Directions

  1. Combine all ingredients in a large pot and stir frequently over high heat until mix starts to boil. Reduce heat. Simmer 20 min, ladle into warm pint jars. Leave 1/2 inch headspace. Adjust lids and process in boiling water bath 15 min at 0-1000 ft. altitude, 20 min at 1001-6000 feet, 25 min above 6000 feet.
  2. Yield: 5 pints
