Ingredients

  • 2 c. dry pinto beans
  • 1 pound ham, cubed (no fat)
  • 1 quart. water
  • 1 (22 ounce.) can tomato juice
  • 2 c. chicken stock
  • 3 onions, minced
  • 3 cloves garlic, chopped
  • 3 tbsp. brown sugar
  • 3 tbsp. minced parsley
  • 1/4 c. minced green pepper
  • 1 tbsp. chili pwdr
  • 1 teaspoon salt
  • 1 teaspoon crushed bay leaves
  • 1 teaspoon oregano
  • 1/2 teaspoon cumin seed, grnd

Directions

  1. Soak cleaned beans overnight; drain. Add in all of the rest of the ingredients, bring to a boil and cook slowly for 3 hrs or possibly till tender. Serve in bowls with tiny minced green onions.
