Ingredients

  • 1 head garlic
  • 1 Tbsp. extra virgin olive oil
  • 2/3 c. water
  • 1 c. pineapple juice
  • 1/4 c. teriyaki sauce
  • 1 Tbsp. soy sauce
  • 1 1/3 c. dark brown sugar
  • 3 Tbsp. lemon juice
  • 3 Tbsp. chopped white onion
  • 1 Tbsp. Jack Daniel's
  • 1 Tbsp. crushed pineapple
  • 1/4 tsp cayenne pepper (I omitted this one)

Directions

  1. Cut 1/2" off top of garlic, cut roots so bulb sits flat, take off paper skin but keep together, put in small baking dish, drizzle with extra virgin olive oil, cover with foil and bake at 325 for 1 hour. Cold. Combine water, pineapple juice, teriyaki sauce, soy sauce and brown sugar in medium saucepan over medium heat.
  2. Stir occasionally till mix boils. Reduce heat to simmering. Squeeze sides of garlic to get out the pasty roasted garlic, mix into the simmering mix with wire whisk. Add in remaining stuff and stir well. Let simmer for about 50 min till sauce is reduced by half and is thick and syrupy. Do not let boil over.
