Surimi Crab Canapes On Cucumber Slices

Ingredients

  • 2/3 c. nonfat cream cheese softened
  • 2 tsp lemon juice
  • 1 tsp warm pepper sauce
  • 8 ounce imitation crabmeat
  •     or possibly lobster-surimi flaked
  • 1/3 c. minced red bell pepper
  • 1/4 c. green onions with tops sliced
  • 64 x cucumber slices

Directions

  1. Prep note: Takes about 2+1/2 medium cucumbers cut 3/8" thick to yield 64 canape slices.
  2. Combine cream cheese, lemon juice and warm pepper sauce in medium bowl; mix well. Stir in crabmeat, bell pepper and green onions; cover. Refrigeratetill ready to serve.
  3. When ready to serve, spoon 1+1/2 tsp. crab mix onto each cucumber slice. Place on servings plate; garnish with parsley, if you like.
  4. Makes 16 servings.
