Strawberry Shortcake Muffins




I had really intended to make strawberry shortcake for the 4th of July but that didn't happen so I had strawberries that I needed to use.

Ingredients

  • 1-1/2 cups strawberries
  • 6 oz light yogurt, vanilla
  • 2/3 cup unsalted butter, melted
  • 1 cup sugar
  • 1/4 cup light brown sugar
  • 2 eggs, beaten
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup flour
  • 1 cup whole wheat flour
  • 1/2 cup oats
  • Pinch salt

Directions

  1. Preheat the oven to 350°F. Place baking liners in a muffin pan and spray lightly with non-stick cooking spray.
  2. In a large bowl combine sugars, eggs and vanilla. Stir in the yogurt and butter. In a separate bowl, mix flours, oats, baking soda and baking powder. Stir the dry ingredients into the wet mixture. Fold in strawberries.
  3. Divide the batter equally among the muffin cups. Bake for 25 minutes, or until a toothpick inserted in the middle comes out clean.
