Ingredients

  • 1 cup sugar, divided
  • 1 tsp baking powder
  • 2½ cups all-purpose flour
  • ¼ tsp salt
  • Zest of 1 lemon
  • 10 Tablespoons cold unsalted butter, cut into pieces
  • 1 large egg
  • 1½ pounds fresh strawberries, hulled and quartered (about 3½ cups)
  • 4 teaspoons arrowroot (or cornstarch if you prefer)
  • Juice of 1 lemon
