Ingredients

  • 6 pie crusts
  • 9 cups milk, non-fat
  • 12 cups egg beaters
  • 15 oz spinach
  • 2 tsp onion powder
  • 2 tsp pepper, white
  • 1 nutmeg
  • 18 oz lowfat mozzarella cheese

Directions

  1. Preheat oven to 275 degrees.
  2. Mix together in blender eggs, milk, spinach, seasonings. Pulse 3-4 times.
  3. Place 3 oz mozzarella cheese in each pie shell. Pour the egg/milk mixture into the pie shells with the cheese.
  4. Bake at 275 degrees for 25 minutes. Then cover the pies with aluminum foil and return to the oven for approximately 45 minutes.
  5. Remove from oven, let set for 5 minutes and cut into 6ths.
