Spinach Fettuccine With Scallop &Shrimp Sauce

Ingredients

  • 1/2 stick butter + 2 T extra virgin olive oil
  • 1/2 c. shallots, minced
  • 1/2 pound bay scallops
  • 1/2 pound shrimp, peeled & deveined
  • 1 teaspoon basil
  • 1/2 c. white wine
  • 1/2 c. grated Parmesan cheese
  • Fettucini
  • 1 T minced dill
  • 1/2 c. half and half

Directions

  1. Saute shallots in oil and butter. Add in shrimp and scallops, stir till coated. Add in spices, stir till coated. Add in wine, reduce liquid by half. Add in half and half, reduce again by half. Add in Parmesan cheese. Pour over cooked Fettuccine.
