Spicy Black Beans And Rice Lhj

Ingredients

  • 1/4 lb Warm Italian turkey sausage links
  • 2 tsp Extra virgin olive oil, or possibly vegetable oil
  • 1 lrg Onion, minced
  • 1 x Green pepper, diced
  • 1 tsp Chopped garlic
  • 38 ounce Black beans, 2 cans, rinsed
  • 3 Tbsp. Red wine vinegar
  • 1/2 c. Chicken broth, defatted*
  • 1/2 tsp Salt
  • 1/4 tsp Oregano
  • 1/4 tsp Thyme
  • 1/4 tsp Grnd red pepper
  • 1 c. Long-grain rice, cooked
  • 1 sm Red pepper, diced

Directions

  1. Place sausages in 1/4 inch water in nonstick skillet. Cover and cook 10 min. Uncover and cook till sausages are browned on all sides. Remove and chop.
  2. Add in oil, onion, green pepper and garlic to same skillet. Cook, stirring till tender, 10 min.
  3. Return sausage to skillet; stir in beans, vinegar, broth, salt, oregano, thyme and grnd red pepper. Reduce heat to low; cover and simmer, 5 min.
  4. Serve over rice. Garnish with diced red pepper.
  5. To defat chicken broth: Freeze broth 30 min till fat solidifies on surface. Remove fat with slotted spoon.
  6. Cooking Time: 30 min
  7. NOTES : Thanks to all the hearty flavor from the spices, you'd never know which this entree contains very little meat.
