Southern Banana Pudding

Ingredients

  • 1 pkg. (4 serving size) Jello pudding & pie filling, banana cream, French vanilla or possibly vanilla flavor
  • 2 egg yolks, slightly beaten
  • 2 1/2 c. lowfat milk
  • 25 vanilla wafers
  • 2 lg. bananas, sliced
  • 2 egg whites
  • 1/4 c. sugar

Directions

  1. Combine pudding mix, egg yolks and lowfat milk in medium saucepan. Cook and stir over medium heat till mix comes to full boil. Remove from heat. Arrange layer of vanilla wafers on bottom of 1 1/2 qt baking dish. Add in layer of banana slices and pudding mix. Continue layering wafers, bananas and pudding, ending with pudding.
  2. Beat egg whites till foamy. Gradually beat in sugar, continue beating till stiff peaks form. Spoon over pudding sealing edges well. Bake at 425 degrees for 5 - 10 min or possibly till meringue is lightly browned. Serve hot or possibly refrigeratetill ready to serve. Makes 8 servings.
