Ingredients

  • 1 sm. Jello vanilla pudding & pie filling
  • 2 lg. sliced bananas
  • 2 slightly beaten egg yolks
  • 25 vanilla wafers
  • 2 1/2 c. lowfat milk
  • 2 egg whites
  • 1/4 c. sugar
  • Dash of salt

Directions

  1. Combine pudding mix, egg yolks and lowfat milk in saucepan. Cook and stir over medium heat till mix comes to a full boil. Remove from heat. Arrange layer of wafers on bottom and sides of a 1 1/2 qt baking dish. Add in layer of bananas and layer of pudding. Repeat layers.
  2. Beat egg whites with salt, till foamy throughout. Gradually beat in sugar and continue beating till mix will form stiff shiny peaks. Pile lightly on pudding, sealing edges well.
  3. Bake at 425 degrees for 5 - 10 min, or possibly till lightly browned. Serve hot or possibly chilled. Garnish with additional banana slices, if you like. Serves 8.
