%20I%20have%20taken%20a%20little%20sourdough%20break.%20It%E2%80%99s%20time%20to%20revive%20my%20neglected%20starter%20and%20start%20baking%20again.%20But%20in%20the%20meantime%20I%20wanted%20to%20share%20these%20sourdough%20bagels%20I%20made%20last%20month.%3C/p%3E%3Cp%3EThe%20last%20time%20I%20made%20bagels%20from%20scratch%20I%20had%20a%20lot%20less%20grey%20hair,%20two%20toddlers%20running%20around,%20and%20was%20doing%20all%20my%20cooking%20on%20an%20apartment-sized%20range%20in%20a%20kitchen%20with%20no%20counter%20tops.%20I%20remember%20it%20as%20being%20a%20lot%20of%20work.%20Well,%20either%20my%20definition%20of%20work%20has%20changed,%20or%20I%20was%20%E2%80%9Cmisremembering%E2%80%9D%20because%20this%20was%20an%20easy%20process%20that%20resulted%20in%20the%20best%20bagels%20I%20have%20ever%20eaten,%20dense%20and%20chewy%20with%20that%20wonderful%20sourdough%20tang.%3C/p%3E%3Cp%3ERecipe:%3C/p%3E%3Cp%3EAdd%20all%20the%20ingredients%20to%20the%20bowl%20of%20a%20stand%20mixer.%20Mix%20for%205%20minutes%20or%20so,%20until%20all%20the%20ingredients%20are%20well%20combined.%20Knead%20for%208-10%20minutes%20until%20the%20dough%20is%20smooth.%20Note:%20Bagel%20dough%20is%20thick%20and%20dense%20so%20kneading%20time%20may%20vary%20depending%20on%20how%20well%20your%20stand%20mixer%20handles%20heavy%20dough.%3C/p%3E%3Cp%3EPlace%20dough%20in%20a%20greased%20bowl,%20cover%20and%20let%20rise%202%20hours.%20It%20won%E2%80%99t%20look%20like%20it%20has%20risen%20much,%20but%20you%20can%20move%20on%20to%20the%20next%20step%20anyway.%3C/p%3E%3Cp%3ECut%20dough%20into%2012%20pieces.%20Cover%20and%20let%20rest%20about%2030%20minutes.%20Shape%20the%20bagels%20by%20rolling%20each%20piece%20into%20a%2010%20inch%20log%20and%20pressing%20the%20ends%20together%20for%20the%20traditional%20bagel%20shape.%3C/p%3E%3Cp%3ECover%20a%20baking%20sheet%20with%20parchment%20paper.%20Spray%20the%20paper%20with%20oil.%20Place%20the%20bagels%20on%20the%20baking%20sheet,%20cover%20and%20let%20rise%20for%20another%20hour.%3C/p%3E%3Cp%3EFill%20a%20large%20pot%20with%20water%20and%202%20Tbsp%20of%20malt%20powder.%20Bring%20to%20a%20boil.%20Gently%20add%20the%20bagels%20to%20the%20boiling%20water,%20a%20few%20at%20a%20time.%20The%20bagels%20will%20sink%20to%20the%20bottom%20and%20then%20float%20to%20the%20top.%20Boil%20for%20a%20minute%20or%20so,%20then%20flip%20them%20over%20and%20continue%20boiling%20for%20about%20another%20minute.%3C/p%3E%3Cp%3ERemove%20from%20the%20boiling%20water%20and%20place%20on%20a%20baking%20sheet%20that%20has%20been%20sprinkled%20with%20semolina%20or%20corn%20meal.%20Preheat%20oven%20to%20500%20degrees.%20Bake%20for%20about%2020%20minutes%20or%20until%20the%20crust%20is%20brown%20and%20crispy.%3C/p%3E%3Cp%3EMass%20produced%20and%20grocery%20store%20deli%20bagels%20will%20forever%20be%20a%20big%20disappointment%20once%20you%20have%20made%20your%20own%20sourdough%20versions.%20In%20fact,%20I%20am%20making%20myself%20hungry.%20Time%20to%20make%20a%20new%20batch!%20What%20about%20you,%20have%20you%20had%20any%20luck%20making%20sourdough%20bagels?%3C/p%3E%3Cp%3ECheck%20us%20out%20on%20Yeastspotting%20too.%3C/p%3E%3Cp%3EAbout%20the%20Author%3C/p%3E%3Cp%3ERenee%20Pottle,%20an%20author%20and%20heart-healthy%20educator,%20loves%20to%20explore%20and%20write%20about%20the%20Mediterranean%20Diet.%20She%20blogs%20at%20SeedToPantry.com%20and%20HestiasKitchen.com.%3C/p%3E){kind=link}
