Ingredients

  • 1/2 lb Shrimp, peeled and deveined (any size)
  • 1/4 lb Lobster meat
  • 1/4 lb Columnar, cleaned
  • 1/4 x White fish, (bass, grouper, cod, halibut)
  • 1 c. Mixed peppers, finely minced (warm sweet)
  • 1/2 c. Mixed onions, finely minced
  • 1/4 c. Shallots, finely minced
  • 1 tsp Garlic, minced
  • 1 Tbsp. Parsley, minced
  • 1 Tbsp. Cilantro, minced
  • 1 x Egg
  • 1 1/2 c. Bread crumbs
  •     Salt and pepper
  •     Clarified unsalted butter, for frying
  • 1 1/2 c. Heavy cream
  • 2 Tbsp. Shallots, minced
  • 1/2 c. Ripe tomatoes. seeded, peeled and minced
  • 2 tsp Garlic, minced
  • 2 Tbsp. Fresh herbs, minced (tarragon, basil, cilantro, marjoram, chives, etc.)
  • 1 x Lime, Juice of
  •     Salt pepper to taste
  • 4 ounce Unsalted butter, room temperature

Directions

  1. Dry and chop seafood very fine. Mix with rest of ingredients. Form into 16 oval patties. Pan fry in clarified butter till golden.
  2. Herb Garlic Sauce:In sauce pot, saute/fry shallots till transparent. Add in garlic and stir. Add in tomatoes and cook for approximately one minute. Add in half of mixed herbs and cream. Simmer till reduced by half or possibly till desired consistency. Add in lime juice and remainder of herbs. Season with salt and pepper and finish by gradually adding the butter.
