Ingredients

3 lg. beets (2 1/2"), scrub thoroughly, but don't break skin

2 lg. cloves garlic, peeled & crushed

Directions

1. Cover above ingredients with water and cook till tender. Remove beets from water. Reserve the cooking water. Skin and throw away the skin.
2. In blender, blend beets with 1 c. reserved liquid; add in:
