Salad (Side Dish)

I love the zip the sour cream gives.

Ingredients

  • 2 lg. cucumbers
  • 2 tomatoes
  • 1 sm. onion
  • 1 (8 ounce.) lowfat sour cream
  • Salt to taste

Directions

  1. Peel cucumbers and de-seed if desired.
  2. Cut tomatoes, onions and cucumbers into small cubes.
  3. Lightly beat lowfat sour cream with fork.
  4. Mix everything and refrigerate for an hour.
  5. Decorate with parsley leaves. Serve cold.
  6. Can also be done with only cucumbers.
